04 May Tasty Tuesday Spotlight: Better With Beets
How did you respond when your Mom put beets on the table?
My response was ‘yuck1’ but that’s before I learned the old saying floated around in the natural health community ‘better red than dead.’ I had NO idea how healthy they are and now they’re a staple in my juicing recipes especially during intermittent fasting.
Beets belong to the same family as spinach, chard and kale and provide impressive health benefits! They are low in calories and a great source of nutrients, including fiber, folate and vitamin C. Beets also contain nitrates and pigments that may help lower blood pressure.
But don’t throw away your beet tops! The beet greens are actually higher in nutritional value than the roots, especially calcium, iron, Vitamin A and Vitamin C. Select beets that are firm, smooth and vibrant red-purple not soft, wrinkled or dull in color.
Here’s a simple juice recipe to get you started:
1/2 beet with top
Add 1.5 cups of water
Toss in your juicer and drink up!
